Thats kind of Bizzare isn't it. Ok I can understand wanting to have your loved pet with you forever, I think we all kind of wish they lived as long as we did but sadly they do die.
I would love to have my pets here but I think having them freeze dried would kind of torture you, I am not sure I could have mine here if they couldn't interact with me, it would make it harder I think.
My only understanding is if death has been extremely sudden and you were not prepared for it, it's sort of nice to have a little bit of time to say goodbye but then apart from the shell of the animal and fur your pet has gone, so even that would seem rather odd.
The thing that gets me though, is animals are the same as us, they deserve the respect of being either buried or cremated as a whole and having them Freeze dried is only satisfying the owners need, it doesn't give much respect to the loved pet.
